Chinese Style Steamed Pomfret Fish

 

Introduction:
This Chinese-style steamed pomfret fish is a classic dish that showcases the delicate flavors of the fish. Steaming the fish with a combination of soy sauce, ginger, and other aromatics creates a light and savory sauce that complements the tender flesh of the pomfret perfectly. It's a simple yet elegant dish that is sure to impress your guests.

What you'll need:

  • 1 whole pomfret fish (about 400g)
  • 2 tablespoons light soy sauce
  • 1 tablespoon Shaoxing wine (Chinese rice wine)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 3 slices ginger
  • 1-2 Tomato sliced into wedges
  • 2 stalks spring onion, cut into 2-inch sections
  • Coriander leaves, for garnish
  • 1 red chili, thinly sliced (optional)

Instructions:

  1. Clean the pomfret fish thoroughly, removing any scales and guts. (The Good Fish can take care of this for you.)
    Make three diagonal cuts on each side of the fish.
  2. Take a heatproof dish that fits inside a steamer, place some ginger slices on the dish and place the fish on top. This is to prevent the fish from sticking to the plate.
  3. In a small bowl, combine the light soy sauce, Shaoxing wine, oyster sauce, and sesame oil. Stir well to mix.
  4. Pour the sauce mixture over the fish, making sure to coat it evenly.
  5. Scatter the ginger slices and spring onion sections over the fish, place tomato wedges, 
  6. Prepare a steamer by bringing water to a boil in a pot or wok.
  7. Place the dish with the fish into the steamer and steam over high heat for about 8-10 minutes, or until the fish is cooked through. The flesh should be opaque and easily flakes with a fork.
  8. Carefully remove the dish from the steamer. Garnish with fresh coriander leaves and more sliced red chili, if desired.
  9. Serve the Chinese-style steamed pomfret fish hot with steamed rice and enjoy!

Note: You can adjust the seasoning according to your taste preferences. If you like it saltier, you can add more soy sauce. Additionally, feel free to add other aromatics such as garlic or lemongrass for added flavour.
